Indian Vegetarian Recipes
- Soups
Tamarind Soup With Peanuts And Vegetables
(A tamarind flavored soup of assorted vegetables)
INGERIDENTS
Carrots (finely sliced)
2
French beans finely sliced
100 gms.
Sweetcorn kernels
50 gms
Green leafy vegetables
a handful
Onion (sliced)
1
Garlic cloves (crushed)
3
Fresh red chillies (seeded and sliced)
1-2
Fresh green chilli (sliced)
1
Raw peanuts
25 gms
Salted peanuts (lightly crushed)
60 gms
Well flavoured stock
5 cups
Dark brown sugar
1-1/2 tblspn
Tamarind pulp
1 tspn
Salt
to taste
METHOD
STEP 1:
Prepare the spice paste by grinding together the onion, garlic, ginger, red chillies and raw peanuts.
STEP 2:
Add the stock to the spice paste and combine well.
STEP 3:
Pour this mixture in a pan and cook for 15 minutes/ adding the salted peanuts, salt to taste and sugar.
STEP 4:
Add the carrots, French beans, sweet corn kernels, and after 5 minutes add the green leafy vegetables.
STEP 5:
Add the tamarind juice and taste for seasoning. Serve garnished with slices of green chilli.
