  Vegetable Khichadi With Raita  
 
INGERIDENTS
For Vegetable Khichadi:-  
Carrot (chopped) 1
Peas (shelled) 1/2 cup
Rice 1/2 cup
Ghee 1 tbsp
French beans (chopped) 7-8
Cumin seeds 1 tsp
Salt and pepper to taste
For Beetroot Raita:  
Beetroot 1 small
Curd (thick) 2 cups
Salt and pepper to taste
Green chilli (chopped) 1
For Garnishing:  
Some Coriander leaves (chopped)
 
 
  METHOD  
  For Vegetable Khichadi:-  
 
Pick and wash rice. Heat oil in a pan, fry cumin seeds. Add all vegetables, salt and pepper alongwith rice and water. Cover and cook on a low flame till all water evaporates and rice is done. Serve hot with raita.
For Beetroot Raita:-
Chop beetroot into cubes and steam in a pressure cooker. Mash the steamed beetroot. Beat curt well. add mashed beetroot and green chilli. Season with salt and pepper. Garnish with coriander leaves and serve with vegetable khichadi.
