  Puri, Channe And Halwa  
 
INGERIDENTS
For Puri:-  
Wheat flour 4 Cups
Salt 1 tsp
Thyme 1-1/2
Oil 3 tsp
water for kneading
Oil for frying
For Channe:  
Black channa 500 gm
Pure ghee 4 tbsp
Salt to taste
Coriander powder 3 tsp
Red chilli powder 3/4 tsp
Green chillies (chopped) 2
Pomegranate powder 1 tsp
Mango powder 1/2 tsp
Garam masala 2 tsp
Cumin seeds powder 1 tsp
Turmeric powder 1/2 tsp
For Halwa:  
Suji (Semolina) 1 Cup
Pure ghee 1 Cup
Sugar 1-1/2 Cups
Green Cardamoms (crushed) 3
Almond and cashew nuts (chopped) 1/4 Cup
Yellow food colour 2-3 drops
Water 6 Cups
 
 
  METHOD  
  For Puri:-  
 
Mix flour, salt and thyme. Put 3 tsp oil and make a stiff dough with water. Keep for half an hour. Break off balls from the dough, roll out puris on a greased board and fry till golden in colour. Serve hot with channe.
For Channe:-
Boil channa till just tender. Drain excess water. Heat ghee in an iron karahi. Add all the masalas and channa to it. Mix well. Cook till all water evaporates and channa is dry. Serve hot with puri and halwa.
For Halwa:-
Heat ghee in a karahi. Fry suji on a low flame till it starts giving aroma. Meanwhile, in another pan boil water, add sugar, cardamoms and yellow colour. Stir till sugar is dissolved. Pour this sugar syrup over roasted suji, stir gently till all water evaporates. Garnish with almonds and cashew nuts. Serve hot with puri and channa.
