Malai Kofta With Lachha Parantha
INGERIDENTS
For Malai Kofta:-
Potatoes (boiled)

Breadcrumbs

Coconut (desiccated)

mixed dry fruits (ground)
1/4 cup
Green chillies (chopped)

Coriander leaves
1/2 cup
Oil for frying
Salt and sugar
to taste
Curd
1-1/2 cups
Blanched Tomatoes (ground)

Cream
1/2 cup
Turmeric powder
1/2 tsp
Garam Masala powder
3/4 tsp
Chilli powder
1/2 tsp
Cumin seeds
1 tsp
For Lachha Parantha:
Flour (maida)
2 cups
Semolina (Suji)
1 tbsp
Curd
1/2 cup
Soda-bi-carb
a pinch
Oil
1 tsp
Sugar
1 tsp
Pure ghee
1 tbsp
Oil for frying
METHOD
For Vegetable Khichadi:-
Pick and wash rice. Heat oil in a pan, fry cumin seeds.
Add all vegetables, salt and pepper alongwith rice and
water. Cover and cook on a low flame till all water
evaporates and rice is done. Serve hot with raita.
For Beetroot Raita:-
Chop beetroot into cubes and steam in a pressure
cooker. Mash the steamed beetroot. Beat curt well.
add mashed beetroot and green chilli. Season with salt
and pepper. Garnish with coriander leaves and serve
with vegetable khichadi.
