Makkai Ki Roti With Saag And Lassi
INGERIDENTS
For Makkai Ki Roti:-
Makki ka atta (maize flour)
2 Cups
Milk (warm)
1/2 Cup
Salt
to taste
Thyme
1/2 tsp
Warm water for kneading
Pure ghee for frying
For Saag:
Mustard leaves (chopped)
500 gm
Spinach (chopped)
200 gm
Bathu leaves (chopped)
125 gm
Green chillies (chopped)
2-3
Ginger (chopped)
1 piece
Jaggery
a small piece
Salt
to taste
Wheat flour
1-1/2 tbsp
White butter
2 tbsp
For Lassi:
Curd
100 gm
Milk (cold)
1/2 Cup
Sugar
4-5 tsp
Kewra jal
1/2 tsp
METHOD
For Makkai Ki Roti:-
Mix milk, salt, thyme to maize flour and knead into a
soft dough suing water. Make a small ball and roll on a
flat board with rolling pin using wheat flour and cook on
a hot tawa (griddle) on both sides using ghee until pink
form on the top. Serve hot with saag.
For Saag:-
Wash mustard leaves, spinach and bathu leaves well,
put them in a pressure cooker. Add green chillies,
ginger, jaggery, salt and 1/2 cup of water. Pressure-cook
for 10 minutes on a high flame and then for 45 minutes
on low flame.
Open the pressure cooker and grind the saag to a fine
paste. Add wheat flout and cook on a low flame for 10
minutes. Mult butter in a frying-pan and add it to saag.
(Add more chillies and salt, if required). Serve saag
with makki ki roti and lassi.
For Lassi:-
Blend all the ingredients together in a blender. Add ice-
cubes and serve chilled.
