  Gatte Ki Tarkari With Puri  
 
INGERIDENTS
For Gatte Ki Tarkari:-  
Gram Glour 1 Cup
Oil 2 tsp
Salt to taste
Thyme 1/2 tsp
Warm water for kneading
For Gravy:  
Onion 1
Tomatoes (chopped and blanched) 3
Green chilli (chopped) 1
Ginger (chopped) 1 piece
Salt to taste
Turmeric powder 1/2 tsp
Red chilli powder 1/2 tsp
Coriander powder 2 tsp
Cumin seeds 1/2 tsp
Oil 1 tbsp
For Garnishing:  
Coriander leaves (chopped)
For Puri:  
Wheat flour 250 gm
Oil 3 tbsp
Salt 1 tsp
Soda-bicarb a pinch
Oil for frying
 
 
  METHOD  
  For Gattte Ki Tarkari:-  
 
Place 8 cups of water in a pan to boil. Mix oil, salt, and thyme into the gram flour. Rub well, make a stiff dough with water. Shape the dough into a roll and drop them in boiling water. Simmer over a low flame for 30-35 minutes or till the roll is done.

Cut the roll into half inch slices. Keep aside. Heat oil in a pan, fry onion, add cumin seeds, then all the masala along with tomatoes. Cook on a low flame till oil leaves the sides of the pan.

Pour 2 cups of water and let it boil (add water in which gattas were boiled). Lower the gattas in the gravy and let it simmer for 5 minutes. Garnish with coriander leaves.
For Puri:-
Mix the flour with soda-bicarb. Sift it twice. Add salt and oil in the flour and rub it well. Knead the flour with warm water to make a soft dough. Cover it with a wet cloth and keep aside for 1 hour. Knead it again and make equal size balls. Roll on a flat board and deep-fry in oil till golden in colour.

Serve hot with gatte ki tarkari.
