| STEP 1: Peel the sweet potatoes. Rince and cut them into slices. |

| STEP 2: Place the sweet potato slices in a large saucepan. Cover with 600 ml milk and cook slowly untill the sweet potatoes are soft enough to be mashed. |

| STEP 3: Remove from the heat and mash well. There should beno lumps. |

| STEP 4: Add the sugar and the remaining 250 ml milk to the mashed sweet potatoes. Stil to blend together. |
 |
| STEP 5: Return the pan to the heat and leave the mixture to simmer until it starts to thicken. |
 |
| STEP 6: Decorate with chopped almonds and serve. |
