  Rosgolla / Rasgulla  
  (Cottage cheese dumplings in sugar syrup)  
 
INGERIDENTS
Milk 7-1/2 cups
Lemon juice 3 tspn
Semolina (suji) 2 tspn
sugar 1-1/2 cups
Water 5 cups
Rose water 2 tspn
 
Rosgolla / Rasgulla, Cottage cheese dumplings in sugar syrup
 
  METHOD  
 
STEP 1: Bring the milk to a boil and the lemon juice to make the milk curdle.
STEP 2: Pass the curdled milk through a muslin cloth. Tie the ends of the cloth and let it hang for 6 hours
STEP 3: When all the whey is drained from the cottage cheese, add the semolina and knead well to make a smooth dough.
STEP 4: Divide and shape the dough into small lemon-sized, round balls. Set aside.
STEP 5: Boil the water and add the sugar and rose water to it. Cook untill it becomes a thick syrup.
STEP 6: Carefully slide the balls into the syrup and cook untill they become light and fluffy and start floating in the syrup.
STEP 7: Remove from the flame and set aside to cool. Serve chilled.
