| STEP 1: Rinse the rice, add 2.1/2 cups milk and bring to the boil over a very low heat, stirring occasionally. Cook until the milk is completely absorbed by the rice. |

| STEP 2: Remove the rice from the heat and mash well until the rice is almost a paste.(There should be no lumps). |

| STEP 3: Return to the heat and gradually add the remaining 2.1/2 cups milk. Bring to the boil over a low heat, stirring occasionally. |

| STEP 4: Add the sugar and continue cooking until the mixture thickness. |

| STEP 5: Decorate with varc and chopped pistachio nuts. Serve hot. |
