  Payasam  
  (Basmati Rice / Long Rice in thickened sweetened milk)  
 
INGERIDENTS
Basmati Rice 75 gms
Milk 5 cups
sugar 8 tspn
To decorate:  
Pistachio nuts (chopped) a few
Varq (silver leaf)  
 
Payasam, Basmati Rice / Long Rice in thickened sweetened milk
 
  METHOD  
 
STEP 1: Rinse the rice, add 2.1/2 cups milk and bring to the boil over a very low heat, stirring occasionally. Cook until the milk is completely absorbed by the rice.
STEP 2: Remove the rice from the heat and mash well until the rice is almost a paste.(There should be no lumps).
STEP 3: Return to the heat and gradually add the remaining 2.1/2 cups milk. Bring to the boil over a low heat, stirring occasionally.
STEP 4: Add the sugar and continue cooking until the mixture thickness.
