(A confection of grated apples and condensed milk)

Apples (grated)
700 gms
Sugar
2 tspn
Lemon juice
of 1/2 lemon
Clarified butter
4 tblspn
Cinnamon stick
1 inch
Cloves

Condensed milk

Raisins

A knob of butter Calvados (optional)
2 tblspn
Almond slivers (optional)

METHOD
STEP 1: As soon as the apples are grated sprinkled them with the sugar and lemon juice to prevent discoloration. Mix well.
STEP 2: Heat the clarified butter in a heavy-based saucepan, add the cinnamon and cloves. After 30 seconds add the apples. Saute for 8-10 minutes over a high heat. Add condensed milk and raisins and saute for a further 7-8 minutes, stirring continuously and scraping the bottom and sides of the pan.
STEP 3: Glaze with the butter. Heat the calvados for a few seconds in a small pan and pour into the halwa. Garnish with almonds, if using.
