| STEP 1: Rinse the masoor daal and place in a large saucepan |

| STEP 2: Add the ginger, garlic, chilli powder and turmeric. Stir in 1-1/4 cups of water and bring to a boil over a medium heat with the lid left slightly ajar until the daal is soft enough to be mashed |

| STEP 3: Mash the daal well. Add the salt, lemon juice and the remaning is mix well. |

| STEP 4: Add the green chillies and fresh coriander leaves to the daal and set aside. |

| STEP 5: To make the seasoning heat oil in a pen. Add the garlic, red chillies and whith cumin seeds and fry about 1 minute. Turn off the heat. Pour this seasoning over the daal. |

| STEP 6: Transfer to a serving dish and serve hot. |
