Indian Vegetarian Recipes
- Chutneys & Pickels
Pickled Cucumber
(A sweet and sour pickle of cucumbers)
INGERIDENTS
Cucumber
1
Castor sugar
2 tspn
Vinegar
1 tspn
Sesame oil
few drops
Salt
to taste
METHOD
STEP 1:
Halve the un-peeled cucumber lengthways. Scrape out the seeds and cut the cucumber into thick chunks.
STEP 2:
In a bowl, sprinkle the cucumber chunks with salt and mix well. Leave for 20-30 minutes and then pour the juice away.
STEP 3:
Add the sugar, vinegar and chilli oil (if using).
STEP 4:
Sprinkle with sesame oil just before serving.
