Mango Chutney |

| INGERIDENTS |

| Green Mangoes, peeled, halved and stoned |
1.35 Kg. |
| Salt |
6 tbsp. |
| Water |
7-1/2 Cups |
| Sugar |
2 Cups |
| Vinegar |
2-1/2 Cups |
| Root ginger, peeled and finely chopped |
850 g |
| Hot chilli powder |
2 tsp |
| Cinnamon (dalchini) stick |
1 stick |
| Raisins (kismis) |
2/3 Cup |
| Stoned dates, chopped |
2/3 Cup |

METHOD |

| Soak chholey overnight. In a pressure cooker, add
chhole along with water, tea bag and 1/4 tsp cooking
soda. Cook channa till tender. In a pan, heat oil. Fry
ginger, garlic and green chillies. Add salt and all dry
masalas, fry for a minute.
Then add channa alo g with water. Cover and cook till
channa well done and of right consistency. Serve hot
with chawal. |
