| STEP 1: Mix sugar and yeast in a small bowl with the warm water until the yeast dissolves. Set aside for about 10 minutes or untill the mixture turns frothy. |

| STEP 2: Knead the plain flour, adding ghee, salt and the yeast mixture to form a smooth dough. Add a little water, if necessary. |

| STEP 3: Cover the dough and leave to rise in a warm place for 1-1/2 hours or untill it doubles in size. |

| STEP 4: Turn the dough out on to a floured surface and knead for a further 2 minutes. Divide the dough into rounds and flatten each round into a naan of about 5 inches in diameter and 1/2 inch thick. |

| STEP 5: Place the naan on a greased sheet of foil and grill (broil) under a very hot pre-heated grill (broiler) for 7-10 minutes, turning twice and brushing with the butter. Sprinkle the poppy seeds. |

| STEP 6: Serve warm or keep wrapped in foil until required. |

| STEP 7: Garnish with coriander leaves and serve hot. |
